Apple TV’s ‘Knife Edge: Chasing Michelin Stars’ Season 2 Episode 3, titled ‘Could You Imagine Losing One?,’ brings the Florida restaurants to the moment they have been preparing for. While Calusso and COTOA are still hoping to earn Michelin stars, Jeremy Ford’s Stubborn Seed faces a different kind of pressure. The Miami Beach restaurant already has a star, which means Jeremy is trying to protect what his team has built while spending less time in the kitchen than before.
The episode follows all three restaurants through their final services before Michelin announces its Florida selections. Calusso makes a risky menu change, COTOA deals with staffing and kitchen limitations, and Stubborn Seed tests whether its younger team can maintain Michelin-level standards without Jeremy constantly overseeing every detail.
Jeremy Ford Has to Trust His New Stubborn Seed Team
Jeremy Ford admits that losing Stubborn Seed’s Michelin star would be extremely difficult to accept. Since first receiving the recognition, however, his restaurant business has expanded considerably, and he can no longer spend nearly every day inside the Stubborn Seed kitchen. That makes new head chef Adolfo especially important, because Jeremy needs to know the restaurant can function at the same level when he is elsewhere.
Adolfo has experience working in Michelin-starred kitchens, but leading one is a new responsibility. His first attempt at creating a fish dish for the tasting menu does not impress Jeremy. The flavors feel too aggressive, and Jeremy makes it clear that experimentation alone is not enough when every plate has to match the standard expected from a Michelin-starred restaurant.
Later, Jeremy takes Adolfo to the farm that supplies some of Stubborn Seed’s produce. The visit helps Adolfo rethink his approach. He begins working with purple long beans and creates a hibiscus glaze inspired partly by flavors connected to his Venezuelan background. Jeremy responds much more positively this time and gives Adolfo room to develop the dish on his own.
Calusso Changes Its Most Popular Chicken Dish
At Calusso, Jonathan Kaiser decides to rework one of the restaurant’s most popular dishes, the honey garlic chicken. His new version includes a crisp chicken thigh, a truffle-filled breast and a richer sauce, turning a familiar crowd-pleaser into something more technically ambitious.
The dish receives approval, but Jonathan knows it also needs to work during a busy service. That pressure grows when the restaurant notices a suspicious solo reservation. The guest’s details appear difficult to verify, and because Michelin inspectors protect their identities, Jonathan starts wondering whether the diner could be evaluating Calusso.

During service, the guest orders several dishes and appears to study the food carefully, making the staff even more nervous. Things become worse when he finds a small bone in his chicken. Jonathan takes responsibility because he personally carved the meat, but the episode never confirms whether the diner was actually connected to Michelin. The uncertainty is the point. Every guest has to be treated as though they could be the person deciding the restaurant’s future.
COTOA Finds a Solution to Its Kitchen Problems
Alejandra Espinoza is dealing with another challenge at COTOA. The restaurant operates from an extremely small kitchen, and one of its desserts becomes difficult to execute because the ice cream does not hold properly in the heat. Instead of removing the dish, Alejandra replaces the unstable element with coconut cream.
The episode also follows a chef working on trial with the COTOA team. Alejandra needs someone capable of handling the restaurant’s tight working conditions while maintaining her standards during demanding services. His performance improves, and the redesigned dessert comes together successfully.
By the end of the process, Alejandra offers him a permanent chef de cuisine position. Even before the Michelin announcement, this becomes an important step for COTOA because Alejandra finally has someone she believes can help carry the restaurant forward.
Adolfo Proves He Can Lead Stubborn Seed
Adolfo’s second attempt at adding his own voice to Stubborn Seed’s menu goes much better than the first. His new fish preparation, built around the purple beans and hibiscus glaze, reaches the tasting menu and earns a strong response from diners.
That success changes Jeremy’s attitude. Earlier in the episode, he worries about having such a young team responsible for protecting a Michelin star. By the final services, he begins seeing Adolfo as someone capable of maintaining the restaurant’s identity rather than simply following instructions.
This makes the Michelin announcement about more than whether Stubborn Seed keeps a star. Jeremy is also testing whether the restaurant can continue succeeding when he is not physically present every night.
Do Calusso and COTOA Get Michelin Stars?
When the Michelin ceremony finally arrives, Calusso does not receive a star. Jonathan is clearly disappointed, especially after dedicating so much attention to raising the restaurant’s level. However, he refuses to treat the result as the end of the pursuit and remains determined to keep improving the food.
COTOA also misses out on a Michelin star, but Alejandra receives important recognition of her own. The restaurant is promoted to Bib Gourmand, giving the team a major reason to celebrate. Although it is not the star Alejandra ultimately wants, the distinction shows that Michelin has recognized COTOA’s cooking and progress.
The result is particularly meaningful considering how much Alejandra has achieved inside such a small space. COTOA leaves the episode without a star but clearly moving closer toward its larger ambitions.
Does Stubborn Seed Keep Its Michelin Star?
Yes, Stubborn Seed keeps its Michelin star. Its name appears among the restaurants retaining their one-star status, bringing immediate relief to Jeremy, Adolfo and the rest of the team.
The result completes Adolfo’s strongest storyline in the episode. He begins by struggling to create a dish Jeremy believes belongs at Stubborn Seed, but he eventually develops something that impresses both Jeremy and the restaurant’s diners. More importantly, he proves that the kitchen can continue operating at Michelin level while Jeremy focuses on his growing restaurant business.
For Jeremy, keeping the star is obviously important, but the deeper victory is realizing that Stubborn Seed no longer depends entirely on him being present every night. Episode 3 ends with the restaurant’s Michelin status intact and its next generation of kitchen leadership looking far more secure.
